Air fryer Roasted Tomato and Red Pepper Gnocchi

This quick and easy air fryer roasted red pepper and plum tomato gnocchi is ready in under 30 minutes and delivers incredible flavour with minimal effort. The vibrant homemade sauce is created by roasting fresh vegetables in our Mellow Yellow Rapeseed Oil, which enhances their sweetness and adds depth thanks to its high smoke point and naturally nutty taste.

Once blended, the rich tomato and red pepper sauce is poured over crispy fried or air‑fried gnocchi and finished with generous Parmesan shavings.

Method

    Simply place the baby plum tomatoes, red pepper, onion and garlic in the air fryer (with the frying plinth removed).

    Drizzle over 1.5 tbsp Mellow Yellow Rapeseed Oil, season with plenty of salt and black pepper and stir to coat thoroughly.

    Roast for around 20 minutes on 190°C until all the vegetable are softened and browning, stir occasionally to ensure even roasting.

    Blitz the roasted vegetable with a stick blender to create a smooth sauce and stir in a handful of chopped basil.

    Place the gnocchi in the air fryer (no need to wash it after the vegetable roasting) and drizzle over a tablespoon of Mellow Yellow Rapeseed Oil.

    Fry for 5 minutes on 190° stirring occasionally.

    Pour the sauce over the fried gnocchi and stir thoroughly to coat. Serve with extra fresh basil and parmesan shavings.
