One Pot Ratatouille Orzo
Our one‑pot ratatouille orzo is a healthy, vegetable‑packed dish bursting with Mediterranean flavour – and you’ll only have one pan to wash! This vibrant twist on classic French ratatouille combines fresh vegetables roasted in our Mellow Yellow Cold Pressed Rapeseed Oil, tender orzo, and a rich tomato sauce for a comforting, nutrient‑dense meal. Finished with fresh basil and creamy feta, it’s a quick and easy one‑pot dinner the whole family will love.
Want to make it vegan? Simply leave out the feta for a plant‑based ratatouille orzo that’s just as flavourful.

Preheat oven to 210°C fan.

Place all of the chopped ratatouille vegetables and garlic into a large baking tray . Drizzle over the Mellow Yellow Rapeseed Oil, sprinkle with salt and pepper and toss to combine. Then bake for 25 minutes, until the vegetables are tender.

Remove the tray from the oven and add the chopped tomatoes, stock, a sprinkle of red chilli flakes, 1/2 tsp of salt and stir in the orzo. Return everything to the oven for a further 20 minutes.

Remove from the oven and stir in the fresh spinach and lemon juice.

Top with fresh basil and feta before serving (or leave the feta out to make this vegan).

1 x 400g tin chopped tomatoes

450ml vegetable stock

1 tsp fine sea salt

1 lemon, juiced
