Plum Muffins Recipe
Make the most of British plums in season with these easy plum muffins, a simple bake packed with warm cinnamon and the perfect soft, fluffy texture. Soured cream keeps the crumb tender, while Mellow Yellow cold pressed rapeseed oil gives each muffin a gorgeous golden finish and beautifully light bite.
We like to chop half the plums and fold them through the batter before topping with slices. Enjoy these light, fluffy plum muffins with a cup of tea in the sunshine – the ideal mid‑afternoon treat.

Combine your flour, ground almonds, baking powder and cinnamon. Stir well and put to one side.

In a separate mixing bowl, add your sugar, soured cream, zest of 1 lemon and 2 large eggs. Stir together, pour in the Mellow Yellow rapeseed oil and mix.

Add the dry ingredients to the wet and stir until fully combined. Spoon into 12 muffin cases and top with slices of plum.

Bake at 160°C for 20-25 minutes. Leave to cool and serve.

Top tip: For extra flavour, chop up half of your plums and stir into your mix before baking.
