Enjoy a delicious and easy twist on our classic hummus recipe with this vibrant Roasted Red Pepper Hummus. Made with sweet roasted red pepper and caramelised garlic, this flavour-packed dip is perfect for serving with tortilla chips, crudités, or spreading in flatbreads for a quick snack or light lunch.

Roasting the red pepper and garlic adds a natural sweetness and depth of flavour, giving this hummus its rich colour and irresistible taste. If you love simple homemade dips, it’s sure to become a new favourite.

Method

    In a roasting tin, add 1 sliced red pepper, 1 thinly sliced clove of garlic and 1 tbsp of Mellow Yellow Rapeseed Oil. Mix to fully coat and then roast for 15 minutes or until softened.

    In your food processor, add the roasted red peppers and garlic, 2 tbsp Mellow Yellow Rapeseed Oil, 1/2 tsp of salt and 1/2 tsp of smoked paprika. Blend until almost smooth. Add your can of drained chickpeas and blend until smooth. Serve and enjoy!
