40 minutes

This roasted butternut squash and chorizo pasta is a rich, comforting dish that’s guaranteed to become a family favourite. The natural sweetness of the roasted squash and the smoky, savoury flavour of the chorizo create a hearty, warming pasta recipe — perfect for a chilly autumn evening or an easy weeknight dinner.

Simply roast everything together in one ovenproof dish, then stir in cream cheese and cooked pasta for a creamy, flavour‑packed pasta sauce with minimal effort and maximum taste.

Method

  1. 1

    Preheat oven to 190°C.

  2. 2

Chop the butternut squash, red pepper and onion into chunks and slice the chorizo. Add these and the cherry tomatoes (whole) to a large roasting dish, season with salt & pepper and drizzle with Mellow Yellow Cold Pressed Rapeseed Oil. Toss everything to thoroughly coat them in the oil and seasoning.

  3. 3

Roast in the oven for 30 minutes. Meanwhile, cook the pasta.

  4. 4

Once roasted, remove from the oven and stir in the cream cheese. Add the drained pasta and stir well.

  5. 5

Serve with parmesan cheese shavings and fresh basil. Enjoy!
