In a bowl, mix together your cooked lentils, grated carrot, peas, chopped red onion, chopped parsley and Mellow Yellow Honey & Mustard Dressing. Mix until well combined.

In a jar, add a handful of pea shoots and layer your lentil mix on top. Close your jar and store in the fridge until ready to eat.

We suggest eating this salad on the day you assemble it and it will be fine kept out the fridge for a few hours if you want to take it to a picnic or event.
