This Carrot, Pea & Lentil Picnic Pot is a simple, flavour‑packed on‑the‑go salad perfect for picnics, BBQs or work lunches. Lentils and pea shoots create a hearty base, with sweet carrot and peas adding freshness. Our Mellow Yellow Honey & Mustard Dressing brings balanced sweetness and bite, making this an easy, healthy vegetarian lunch you can assemble in minutes and take anywhere.

Method

    In a bowl, mix together your cooked lentils, grated carrot, peas, chopped red onion, chopped parsley and Mellow Yellow Honey & Mustard Dressing. Mix until well combined.

    In a jar, add a handful of pea shoots and layer your lentil mix on top. Close your jar and store in the fridge until ready to eat.

    We suggest eating this salad on the day you assemble it and it will be fine kept out the fridge for a few hours if you want to take it to a picnic or event.

  • 125g cooked lentils

  • 1 carrot, grated

  • 50g peas (remove frozen peas from the freezer 30 minutes before use)

  • ½ red onion, finely chopped

  • 1 tbsp parsley, finely chopped

  • 2 tbsp Mellow Yellow Honey & Mustard Dressing

  • Handful of pea shoots
