This Chicken and Egg Protein Salad is super filling and full of flavour thanks to our Mellow Yellow Classic Vinaigrette. Combining chicken and egg gives this salad plenty of high‑quality protein to support energy, healthy muscles and bones. We love using our homemade Crispy Chicken Goujons, but ready‑made breaded chicken works well too.

With spinach, avocado and parmesan for extra nutrients and richness, this high‑protein chicken salad is satisfying enough to enjoy as a main course and perfect for a quick, healthy lunch.

Method

    Cook your breaded chicken breasts and slice.

    Assemble your salad with spinach first, then sliced avocado, boiled eggs, sliced chicken and sprinkle over parmesan shavings.

    Drizzle with Mellow Yellow Classic Vinaigrette and enjoy!
