Crispy Baked Rice Paper Rolls

These crispy oven‑baked rice paper rolls are a flavour‑packed, healthy option that’s perfect as a starter, side dish, or gluten‑free alternative to classic spring rolls. Loaded with fresh vegetables and baked until beautifully crunchy, they’re a lighter, wholesome twist on a favourite.

Method

    Preheat your oven to 210°C fan.

    Finely slice the courgette, carrot, pepper and spring onions. Separate them evenly in ten individual portions and keep them aside.

    In a bowl with lukewarm water, dip the rice paper sheet for a few seconds on both sides until it becomes slightly soft. Do not over soak otherwise it will become too sticky and difficult to handle.

    Add one portion (sliced courgette, carrot, pepper, spring onion) to the bottom-end of the rice paper sheet. Start folding it by rolling the sheet away from you. Bring the left and right sides in before the final fold.

    Place all 10 rice paper rolls on a lined baking tray and brush each one with Mellow Yellow Cold Pressed Rapeseed Oil on all sides.

    Sprinkle the rice paper rolls with sesame seeds and bake at 210°C fan for approximately 30 minutes until crispy and golden.

    In a small bowl, thoroughly mix together your lime juice, mango chutney, ginger, garlic, salt and pepper.

    Pour in your Mellow Yellow Chilli Oil and stir well to fully combine.

Ingredients

  • For the Rice Paper Rolls:

  • 10 sheets of Vietnamese rice paper

  • 1 large courgette, finely sliced

  • 1 large carrot, finely sliced

  • 5 spring onions, finely sliced

  • 1 yellow pepper, finely sliced

  • 10g sesame seeds

  • 2-3 tbsp Mellow Yellow cold pressed rapeseed oil

  • Water to soak rice paper sheets

  • For the Dip:

  • 1 tbsp lime juice

  • 2 tsp mango chutney

  • ½ cm ginger, finely chopped

  • ½ clove garlic, finely chopped

  • Good pinch of salt & black pepper

  • 1 tbsp Mellow Yellow Chilli Oil
