Roasted Broccoli with Parmesan, Lemon & Pine Nuts
This Roasted Broccoli with Parmesan, Lemon and Pine Nuts is a vibrant, flavour‑packed broccoli side dish. Lightly roasting the sprouting broccoli enhances its natural nutty flavour while keeping important nutrients intact. A bright dressing of lemon, parmesan and Mellow Yellow Rapeseed Oil adds a fresh, cheesy, citrusy finish, with toasted pine nuts bringing rich depth.

Preheat the oven to 190°C.

Place the broccoli and garlic into an oven proof dish. Season and drizzle with a generous tbsp of Mellow Yellow oil, toss to coat thoroughly. Roast for 20-25 mins until slightly tender.

Meanwhile combine the lemon juice and zest, grated parmesan, and 1 tablespoon oil.

When the broccoli is ready, immediately drizzle with the lemon mixture, sprinkle with Parmesan and pine nuts and toss to combine. Serve hot.
