Parmesan Roasted Parsnips Recipe

Our Parmesan Roasted Parsnips are a delicious twist on traditional festive vegetables and a must‑try Christmas side dish (or for any time of the year!).

The savoury parmesan and fragrant rosemary pair beautifully, creating irresistible flavour and golden, crispy edges. Roasted in our Mellow Yellow Rapeseed Oil, this recipe benefits from the oil’s high smoke point and subtle nutty taste — perfect for achieving perfectly caramelised parsnips.

Method

    Preheat oven to 190°C fan.

    Cut the parsnips in half and slice lengthways.

  3. 3

    Place the parsnips in a bowl, drizzle with 1 tbsp of Mellow Yellow Rapeseed Oil and stir to fully coat in the oil.

    To a separate bowl, add the grated parmesan, chopped rosemary and flour. Mix to combine. Add the parsnips and toss to fully coat them in the cheese and seasoning mixture.

    Drizzle the remaining 1 tbsp of Mellow Yellow Rapeseed Oil on an oven proof tray and transfer the parsnips onto the tray.

    Roast in the oven for 15 minutes at 190°C fan.
